Venezuelan Arepas…A Throwback

When I was in 5th-7th grade, I lived in Puerto Ordaz, Venezuela.

I loved living there and did not want to come back to the states because I had so much fun!  I loved the country, the beauty, the people, the food and the language.  One the foods that I adored the most was the arepas that you could buy on the street. However, the best ones were cooked by our neighbor, Senora America.  (Yes, that was really her name!) 

In honor of that delicious meal, we decided to try making them ourselves tonight for the first time.  We were inspired to do so after watching and episode of Diners, Drive-ins and Dives where they highlighted food from a Venezuelan restaurant. 

The arepas are very easy to make,

You mix equal amounts of the corn flour and water with pinch of salt.  Once you get the right consistency, you form them into balls then pat them out to thick patty shapes. You fry them in oil to get the outside crispy and then bake them in the oven. 

You then can stuff them with whatever you like.  Tonight we used fried eggs, refried beans, onions, guacamole, cheese and salsa.  

They were FANTASTIC!
